I have no idea how the illustrious peanut got the name "goober pea", but I like it.  It's cheeky.  It sounds like something my 3 yr. old would come up with, which makes it extremely popular with me.  I like names and titles that possess a bit of sparkle and sass.  And "goober pea" makes me grin.  Case closed.

So, when I started fiddling with various_ahem_"peanut butter" cookie recipes, specifically gluten-free recipes, I found it hard to find one that I liked.  Most were too sweet, too crunchy, too dry, etc.  Even the recipe I found on a very popular gluten-free blog was so sweet I thought I was going to die. 

Added to that is the fact that most moms I know are trying to cinch in our spending.  Especially the moms I know who have kids with special dietary needs.  So, here is my recipe for Goober Pea Cookies.  It's not complicated or "gourmet" and it definitely has been designed by me to let the beloved goober pea shine in all it's glory.

Goober Pea Cookies

Preheat the oven to 350 degrees

3 C. peanut butter
1 3/4 C. sugar or sweetener of choice (just be aware that using honey will change the consistency)
2 eggs
2 1/2 t. vanilla
1 1/2 t. gluten free baking powder

Dump everything in a bowl and mix on medium speed until all ingredients are combined well.  I highly recommend pressing them with a fork that has been dipped in sugar.  I just looks like a bona fide goober pea cookie when you do that. 

Bake for approx. 15 minutes on the middle rack of the oven. 

Wish I could tell you how many cookies this recipe makes.  The super-scientific guess?  A slew.  Yup, it makes a slew of super chewy, soft, goober pea-ish cookies.

You know what I say?  "Goodness, how delicious"

  4. You know, I call Ferris “Peanut” a lot, so maybe I should name this next baby “Goober Pea.” What do you think? Though, I still like Gilligan. ;)
