WE’ve been making lots of banana bread with much success using two different flours, 1 is the feather-lite mix & the other is regular old rice flour. With both we use 1/2 t of xanthum gum for every cup of flour. It works perfectly ~ my son & I don’t need the gf, but my husband & other son do. I don’t miss it in this recipe. I use the Kid’s Allergy-Free Cookbook all the time for basic. It’s for families, so the recipes are what we want to eat, designed to taste right & be made fast.
