WE&#039;ve been making lots of banana bread with much success using two different flours, 1 is the feather-lite mix &amp; the other is regular old rice flour.  With both we use 1/2 t of xanthum gum for every cup of flour.  It works perfectly ~ my son &amp; I don&#039;t need the gf, but my husband &amp; other son do.  I don&#039;t miss it in this recipe.  I use the Kid&#039;s Allergy-Free Cookbook all the time for basic. It&#039;s for families, so the recipes are what we want to eat, designed to taste right &amp; be made fast.
